Donko is our most premium dried Shiitake in terms of taste, texture, and appearance. Each individual shiitake mushroom is exposed to different micro-climatic conditions that produce distinctive shapes, colours and patterns on the surface of the mushroom.

Donko means “Flower Shiitake”, so called because the unique location in which these mushrooms grow, often on the underside of logs, means they are not exposed to rainfall or excessive moisture. This allows them to develop a beautiful white cracking pattern on their surface, that resembles an open flower.

Shiitake displaying this pattern are considered the most delicious, with the best aroma. This pattern can be easy to create in the controlled environment of a greenhouse it is much rarer in a forest environment, where the best flavoured and textured shiitake are found.
